I want to start my blog with a healthy,lip smacking atta ragi cake.It will defy the fact that anything tasty is not healthy..I am not an expert cook but i can cook tasty healthy treats that are edible ;-). Now a days with ever growing nuclear families even learning basic cooking is a great achievement..so i will include some basic everyday recipes too in future posts that might be of some help to someone..All my recipes will be tried and tested ones.The baking recipes are all borrowed from different sources which will be mentioned as far as my memory supports.I search for simple recipes with easy to obtain ingredients and nothing exotic..
The cake is made out of whole wheat flour(atta), finger millet flour (ragi) and eggless and is butter less(has little oil).It has got a crumbly and dense texture but topped with chocolate ganache it was a bliss and it can be enjoyed guilt free..so take out your baking weapons and basic things in your pantry and you will be blessed with a chocolaty cake with a beautiful cracky crust in 30-45mins..
Ingredients:
Dry Wet
Whole wheat flour(godhuma pindi) - 1cup Thick yogurt - 3/4 cup
Ragi flour - 1/2 cup Milk - 1/4 cup + 2 tbsp
Powdered brown sugar - 1 cup Any oil(i used Rice bran) - 1/4 cup
Baking Soda - 3/4 tsp Vanilla essence - 1 tsp
Cocoa powder - 2 tbsp Honey - 2 tsp
salt - a pinch Walnuts toasted and chopped(optional) - 1/2cup)
1.Sieve wheat,ragi flour with baking soda,cocoa and salt..I do it three times to make it light
2.Mix powdered sugar with flour mixture.
3.In a bowl, mix yogurt+honey,oil,milk and vanilla essence and keep aside.I usually use a wire whisk but as i falied in the past with eggless recipes, i used electric beater to aerate the mixture.
3.Now with a whisk gradually incorporate the flour mix into the wet mixture.
4.Preheat oven to180 degrees
5.Pour the mixture in a greased tin and and bake for about 30 min.Again,every oven is different..so keep checking after 25 min for your knife to come out clean..
6.The cake baked evenly..After it cooled down, i refrigerated it and though it might leave the taste of ragi on your tastebuds,you can complely disguise it if topped with ganache..So much for health..huh..
Note: I made a thick chocolate sauce and layered in between the cake.I poured warm ganache over cool cake slices and everything was beautiful together.. the best compliment my daughter gave when i asked her 'does it taste like a bakery cake?'.. she said 'No! It is better than that'...So this recipe will permanently etched into my recipe collection book..So try this people..those with kids like mine might understand how satisfied i am for not depriving her of these sinful delicacies...
